Industry
Overview
The production
of chicken in Canada operates under a supply management system that
originated in the late 1960's to prevent dramatic swings in farm
production in key commodities such as chicken, milk and eggs. In
a supply management system, producers control the production or
supply of a commodity by a system of production quotas established
by national and provincial marketing boards- The Chicken Farmers
of Canada and The Chicken Farmers of Saskatchewan respectively.
The principal objectives of a supply management system are to ensure
that domestic consumer demand for the product is satisfied at stable
and affordable prices and that producers receive reasonable returns
for their efforts.

The Canadian Industry
In 2005, chicken consumption was 30.7 kg. per capita, an increase of 24% over 1995. This compares to a decline in per capita consumption of all other meats of 7% over the same period. Total Canadian production in 2005 was 981 million kg. Imports to Canada amounted to 127 million kg. In 2005, there were 2786 chicken farmers across Canada and 188 poultry processing plants, with the production sector employing approximately 30,500 people, and supporting thousands of other jobs that depend on the industry.

The
Saskatchewan Industry
In 2006, Saskatchewan’s 93 producers produced approximately 38 million kg. of chicken, an increase of 144% over 1996. Saskatchewan has two processing facilities.
Lilydale Inc. has a primary processing plant located in Wynyard Saskatchewan. This facility has been a part of the Saskatchewan Poultry industry since 1958. Lilydale is one of Canada’s largest poultry processors and also has facilities in British Columbia, Alberta and Quebec.
The Wynyard plant is a combination plant that process and packages Broiler Chicken and Turkey grown in Saskatchewan. The plant specializes in retail tray packing as well as food service products to supply customers not only across Canada, but also the World through an Export program.
Prairie Pride Natural Foods Ltd. began operations in January, 2006. Prairie Pride is now fully operational and is one of the most modern facilities of its kind in Western Canada. Prairie Pride is a proud Saskatchewan based processor which offers a complete line of fresh and frozen cut-up chicken products.
